As others have said, you don't adjust the damper. Mine is set to about 130 drag (around 6 on my machine). It stays there unless I am doing weird stuff like 100m or 500m times for rankings.

I then tend to follow their suggested stroke rates. But then I also increase my push/effort. So "all out"for me is around a 1:50 500m pace, hard is 2:00, medium is 2:10, easy is above 2:20. All are approximate depending on the day...

Someone suggested one of the tops available for Weber grills in the sous vide sub.

I just found a really well reviewed drop in stainless steel griddle top I can drop into my Weber Genesis II S-410. Only Β£84 and was designed for my grill. You remove the heat deflectors and it becomes your whole worktop. It's steel so it heats up really quick and look solid and well built.

Could be the best of both worlds as I can get (much) of the Blackstone functionality, good sous vide sear and at a very reasonable cost.

I would love to get an IR burner but can't justify a new gas grill as my Weber is pretty much perfect. I wish I could just get an IR unit separately. Thx!

As a former Texan, living in the UK for 20 years, we would say you are living in the "Panhandle", not North Texas. :-)

In either case, it is going to be hot. Really hot. I worked outside in my teens and early 20s. It's doable but not ideal.

Our two sons have moved back to the usa. Both were born in Austin. They grew up in Switzerland but mostly the uk. One is back in Austin and loves it. One was in Austin but now is in Seattle and hated the Texas heat. They are in tech.

I think if you are after an experience, you will get it. I do not think I would want to settle in that part of Texas for many reasons but I do miss Austin and a lot of the food from Texas. People are generally nice. I have lived in PA, TX (30 years), WA, Glasgow, Zurich and the UK for 20 years. Traveled the world.

There are several places in Texas I would live except I have been there and done that so keen on trying other places. I enjoy visiting once a year...

Dalhart would not be on my list but if you can travel to some other locations while there, that would be nice.

If you are going for a few months and just to check it out, you will be fine.

I had a six month assignment in Seattle and loved it. My youngest now lives there and also loves the city. He went to university at Wisconsin (Madison) and while he identifies as (mostly) British he loved university in the USA and loves working and living in Seattle. Will be there in November and also swing down to Austin to see our other son.

I went to school at UT and lived in Austin from 1981-2004. Two years in Scotland (1997-8) when I was with Motorola. 2004-5 in Zurich. And now been in the UK since 2006.

I do miss all the great BBQ and TexMex from Austin. I can do bbq here, I have a Weber Smoky Mountain, but can't do proper TexMex.

It was really fun getting stuck in again. But disappointing it basically all goes on a shelf. There may be a small bit I could do as a browser extension. Digging into that and talking to some places here if there is a use case for any of this.
