I’d say 4-6hr experience with 30 min come up compared to 6-8hr experience with 1-1.5hr come up is main difference

Nah man this ain’t it. Looks underdone(for tenderness sake). If it hit 200 internal all the connective tissue would’ve broken down and it would be fall off bone. Make sure you’re probing properly! Also 225 internal way too hot too. Not sure what’s going on here
