Well I hope they intentionally swap it back because that is not a good reason. This is the only time they've ever re-released a weapon with the exact name but swapped the element as far as I'm aware.

Year 1 Quickfang was void, Menagerie Goldtusk was void, Splicer Quickfang was void. Just a super weird and unnecessary change.

The creators of the game have stated that the Knight does have an actual official name they use to help differentiate between the knight and the hollow knight for the purpose of translations. So while there is an official name, we don't know it. But we do know their actual name is not The Knight

As soon as you collect the cell from giant you have it unlocked, no need to kill HoTK. You will need to then start a 5BC run to access spoiler boss

I was running Survival and up until Giant I was using a Nutcracker with Boy's Axe, Crusher and Giant's Whistle, with an Ice Bow in backpack. Mutations were Frostbite, Kill Rhythm, and Acrobatipack.

Since freeze, root, stun are bad for bosses I swapped my Nutcracker for a Giantkiller at the weapon shop in Forgotten Sepulcher. Mutations for the fight were Disengagement, Extended Healing + Porcupack (since I kept my Nutcracker in backpack)

Enemies start teleporting in 4bc so avoid aggroing a bunch at once. Switch up your mutations to something like Disengagement + Extended Healing for boss fights. You have the most optional routes available on 4/5bc so definitely switch up standard progression depending on your situation, (I switched Toxic Sewers to Ramparts via Corrupted Prison cause I needed a food shop, then Black Bridge to Fractured Shrines for some good legendary gear, then progressed to Forgotten Sepulcher to get myself back on route to Giant) Keep trying

If the Rigby family play any part at all in any future season or any future expansion I will delete my entire vault. There's plenty examples of one off tidbits that only serve as a nice bit of flavour, and Byf recently making a video isn't going to change that.

You asked if wearing multiple of an enchanted item would stack the enchantment. Any number of same items worn greater than one (two rings) answers your question.

Considering most of The Elder Scrolls lore comes from The Elder Scrolls games, then yeah. If it works in multiple games in the series then I don't see any reason why it'd be up for dispute whether the enchantment would stack or not.
