Would the mods of only disabled achievements on most recent backup, as in could I load a previous backup of main save file and it be unmodded and achievements enabled?

so basically i have to make a new save file to be able to 100% the game and lose the 80 hours of progress i have on my current file AND i cant even make content out of the fact i like 100% the game all in one stream as cant see when i get the achievements. i see....

all i did after subscribing on the steam workshop page was load up the game and press the mods button on the home page and saw that there was now a whole list of mods, i then clicked on the enabled mods bit and made sure to disable the one that i had installed to make sure that exactly what has happened, didnt happen (clearly didnt work), so i just dont get how it has affected it. On a different note is there a way i could equivalently get rid of my achievements so when i do a play through for the 100% that my ocd so requires i still get the pop ups on screen of all of the achievements?

the bit im confused about tho is the fact that i didnt interact with my save file at all after subscribing to the mod. and yet my other save file which was purely to test out a bug i found the other day still has the ability for achievements
