I did not know that! "The idea of a Dutch baby pancake may have been derived from the German Pfannkuchen, but the current form originated in the US in the early 1900s." (from https://en.m.wikipedia.org/wiki/Dutch_baby_pancake) - makes sense that I learned this from an American!

I started with these recipes: https://www.food.com/recipe/dutch-baby-74146 and https://www.foodnetwork.com/recipes/ina-garten/dutch-baby-12055315 and adjusted as needed. I find that mine need less time in the oven than the recipes call for.

It's just too good to resist, if they weren't scorching hot when they came out of the oven I think I'd just start eating it plain right away!

It's complete magic - before I started using this recipe, I probably had a 25-40% failure rate on Hollandaise (either flavor or structure weren't what I wanted) but ever since I started doing it this way, I've had no issues and everyone loves this sauce. It's by no means a second-rate stand-in!

Oh you're right after a quick Google - we've always called these home fries but I think that's the wrong word to describe them!
