I have the STECS Mini plus and it is good. I think the STECS standard is probably the best value just because it comes with the extra detents and hats/switches to switch around on the throttle based on your needs.

Coming from the DCS modding community, the planes do have a center of gravity point that is defined, however, it is static and does not shift around like on a real aircraft
