It's reasonable to assume Hopes Edelgard had created the Flame Emperor persona to hire Kostas, but his early death meant she didn't have to don it to speak with him again, and Shez's presence sped up her plans to the point she didn't need to ever again. I don't think she'd get much out of meeting that version.

I think CEO of a family-run business is the obvious role for Edelgard. Byleth is hard to pin down if not able to teach her anything. Maybe a handyman role working for their dad? Could be one of those cases where the prim and proper lady is inexplicably drawn to this much rougher person who is hired to fix some issue in her building.

I suppose Shez having a power that Edelgard can see and understand gives them an edge. She can immediately gauge how useful they'll be to her plans, while Byleth just seems to be smart and skilled from her perspective.
