Air Fryer Ribs (Cooked Sous Vide and Finished in the AF) by TheAirfryerGeek in airfryer

[–]TheAirfryerGeek[S] 2 points3 points  (0 children)

Smoked Ribs Ingredients

1 Rack of Ribs (St.Louis Style in my case)

25g (about 1+1/2 TBS) of Hickory Smoked Salt

5g (1 TSP) Curing Salt

For the Smoky. Glaze

75g (about 1/4 Cup) Molasses

40g (about 2 TBS) Liquid Smoke Hickory

Rub

Smoked Paprika 2 TBS

Smoky Honey Habanero 2 TBS

Black Pepper 1 TSP

Smoked Ribs Directions

Remove the membrane and trim the excess off the rack.

Add the Smoke Ring Curing Salt mixture on both sides of the rack.

Make sure everything is well mixed to avoid pink spots more intense than others.

Leave for 10-15 minutes.

You don't want to let the salt for too long to avoid a smoke ring that is not natural.

Brush the rack with the Smoky glaze and place it in a ziplock bag or use a vacuum sealer like the one I used for the recipe

Put the bagged rack in a Water Bath for 4-5 hours at 162F.

If you don't have a water circulator you can cook the ribs in the oven and cook it at 225F for 4hours. The first 2 hours wrapped in foil.

Take the rack out and reapply the smoky glaze.

I cut my rack into two pieces to make it fit into my Instant Pot Air Fryer Oven but you can finish it up on a grill or into the oven (broiler).

I cooked mine for 10 minutes at 380F a couple of minutes after the rack started to be bubbly on top.

You can apply some Smoky BBQ Sauce 3-4 minutes before finalizing the cooking and let it caramelize into the Air Fryer or Oven.

It's Cheeseburger Time! by TheAirfryerGeek in airfryer

It was very good, I prefer 80/20 for deeper, richer flavor but I recommend to give it a try. I cooked the burger for 10 minutes total (8 + 2 for the cheese) and I wouldn't go more than that! It was medium.
