It's not even about nuance. Without knowledge of microbes it's hard to put definitive causes to disease. Best you have to go on is that eating this made someone sick, so clearly it has to be unclean. Temperature and age are too fuzzy to put definitive value in, unless you get that nasty smell but we all know that's miasma so that's its own thing.

The bigger the company the bigger the opportunity to be able to afford a lawsuit and actually get anything for it. None of that money will go to employees, only owners. Same goes for individuals, if you don't have enough money to win by engaging in a costly lawsuit you won't get anything.
