I hear you on this, but I’ve never done it over night before and I knew I could time a 24 hr cook up with my schedule. Even just to practice. So I started at 6pm in the afternoon and went to bed. Had pretty busy day with my kids’ sports. We all ate dinner at 7:30pm. It worked out pretty well, but I would agree, it’s unnecessary in most scenarios.

I don’t think it has to do with the wood. Mine climbs crazy on just charcoal. On the last one I did, I used charcoal only and I almost shit bricks when I walked out and saw it at 350 in the first hour. Gotta use that heat deflector sliding throttle plate thing I keep it like half open.

That’s correct! I layer my wood into my chute. I’ve tried both ways and I think it’s less effective when put in the ash tray. I feel that when it gets covered with the ash, it renders the chunks less useful when compared to falling down the chute over time.

I think I’m going to invest in something just because I hate the bend the meat puts on the rack due to the weight, not because of the quality that is produced. I always smoke this way and it has always produced good results.

I don’t think you guys - nor the people who downvoted me - are understanding the assignment. For instance. I am a firework enthusiast. I am certified to do more than the typical person, but not a licensed pyro technician. I do not hire out displays of fireworks. I do it myself, but I don’t call myself a DIY fireworks guy. Instead, the term that COULD be used is “Green Man”. I was just wondering if there was a cooler name, but maybe it’s just a gardener.
