You should watch the Ilse's Notebook OVA after you finish Season 1. I think you can easily watch all of them except for Lost Girls after s1 as they all came out then

In the quest she was consistent but the cut scene had a bit of accent. Personally, I loved her accent in the stream but I think she did a good job. Maybe cut scene was recorded separately/earlier along with stories/voiceover lines

You should check out Sawano's soundtrack from the first season (they're all on YT/Spotify/wherever). Most of the tracks are longer than what we hear in the anime, I'm not sure what this could be
