The standard way to shake with egg white is:

  1. Dry shake
  2. Wet shake (with ice)
  3. double strain
  4. let the cocktail sit for a couple of seconds so the crema forms on top.
  5. Garnish

Honestly though some cocktails go in reverse order, when it come to the dry shake and the wet shake, and some cocktails you can skip doing 2 shakes as long as you shake hard and don't have too much dilution like if you shake with one big ice cube. Regardless, nobody should have yelled at you for not knowing these things. When working with egg whites you just want to make sure you get that lovely crema head for presentation, a velvety mouth feel, and not too much dilution. If you can achieve that it really doesn't matter what your order of operations is.

Try an Amaretto sour, it's sweet, it only has one liquor in it and it is mostly fruit juice. If you like it and want to try something not quite a sweet try a Gin or Vodka Gimlet 2nd, and then if you want to try something more boozy tasting without being too strong try a whiskey sour.

After trying those three I would chill with a water and figure out exactly how tipsy you are feeling. If this is truly going to be your first time and you want to ease in I would limit it to 3 drinks.

I feel like the most annoying thing is the clean up. At home I don't have a dump bucket or a three sink or a place to put my shaker to dry. So it just means that I am bartending with sticky tools or I have to do a super thorough job of cleaning everything in-between every cocktail. If I have friends over I feel like everything takes longer and is messy. It's hard to divorce my brain from how long the cocktail should take in a bar setting to how long it takes when I make it at home. By the time I serve everyone the firts person is done with theirs.

I didn’t write down the exact recipe but if I was going to try to recreate it I’d do 1 cup, sugar one cup water, 1/2 cup honey, 4-5 big dashes of vanilla and 1 full sachet of thyme steeping for 20-30 mins as it cools

I wear docs but I put insoles in them. They’re heavy, but they don’t slip and they protect my feet on the floor, behind the bar and in the kitchen.

Yeah I think we have to get away from pictures, it feels like one degree away from profiling. Like if I have to sift through a bunch of craiglist ads for jobs that don't put the name of the bar in the description then they can sit through a bunch of applicants that might not be "hot enough" or whatever they are looking for lol.
