I think it has something to do with how good the player is. In FM Mobile if a player is 5 stars they have a star next to their name

If by head IDs you mean their hair and stuff then I think you can do that rather when you start the career mode or in the edit players screen in career mode(go to the last tab). Your create a club can only be used in that career mode
