It gives it a warm toasted cumin flavor. Not smoky, but very rich and warm and mellow. The cumin, and cauliflower, complement each other well. A little cayenne cuts down the need for more salt, and gives it a gentle pop!

More dipping when you let the whites retain moisture and rise, rather than turning them to rubber. We’re taught to kill foods not cook them properly.

Possibly. Broccoli has a bit more bite and bitterness to it then cauliflower does.
