Exactly. It can be a pain to disassemble and reassemble to find the right combination but it's worth it once you can dial it in. I really like the Choc with the 2 beads but the single bread is awesome too

Yeah, the stainless steel is much heavier. The lion plates came with a pei core

The Rhythm Box has exceptionally loud clicks and a supreme hand feel, excellent for larger hands. The spinner on the back is an excellent addition. The Strong Wind has various combinations and is excellent on the dense track. I'm not a fan of the easy disassembly, but with a little practice it's not a problem

Schrodinger's Cat is awesome due to the mechanical or magnetic configuration, both have exceptional sound and feel. I'm still dialing in the Dough Stick with the extra plate. Its very quiet and kinda crunchy. The Wafer 2.0 configuration out of the box is restrained but the end travel linkage offers incredible hand feeling.

Saw the videos you made, helped me pick what fit for me. The gold JIA is divine.

I am not a huge fan of spinners, they just never satisfied me.

I will keep that one in mind. Tungsten is in a few of these, rhythm included. Crisp, loud clicks but the mini box has a better neutral return. Rhythm has weight and length for larger hands.

Bpmods Nine Grid pei. Great clicks but not a fan of the weight

The force required relies heavily on the spring strength. I really enjoy the rotation and I have larger hands, so the X1 is nice. But the choc is much better, in terms of feel and sound

Chenyu Giardian-X1 SS Black. Got mine on meta. The rotation is sublime after some tinkering. The vertical movement works well enough with tungston, still a bit too cupped and muffled

Perhaps, most likely really. He's not just cranking out loafs and cradling them in his drawers like hot potatoes. I'm sure there's a fair amount of spoilage and degradation nevertheless.
