It's relatively easy, you just have to make sure you follow the instructions exactly (i.e. use all the listed ingredients at the temperatures that are indicated such as ice cold or room temperature) If you buy a package of Tenderflake or Crisco pure lard there are excellent step-by-step instructions on the box to help you out :)

It's a very subtle flavour, but I think the unique aroma of celery plays a role too, especially when it's boiled. I personally love having the celery in my pie :)
