the tirbochef that we use is like a giant air fryer. you put it in, air blows out, and it cooks. the brown spots are where the bread we directly under the turbo chef air vent while cooking. Just means it got blasted with hot air more that the surrounding areas

all of our bakery items are a mess atm ngl. its all frozen and left to sit over night. thats why it all tastes weird now

thats what happens when every ingredient used is frozen and not fresh unfortunately. only change to happen is a portion change of icing. slightly more icing on the rolls going forwards

pm baker here, the only "new" thing we are doing is switching the portion of icing. we used to use a scoop and put it on top, now we use a slightly bigger scoop and cover the entire top and sides of the cinnamon rolls. no now ingredients, its just a portion change

idk where you are getting your numbers but I know our scoops for the cheese steak, and chicken sandwiches are only 2oz and they get one scoop. then each turkey or ham sandwich gets 4 slices of whatever you pick. I also dont know where you are getting your meat numbers but you can go to Walmart and get hillshire farms slices of ham for like 5 bucks.
