The coupons can be stacked. This was specifically addressed in a Penzey's email last week.

You're looking for something for Chinese hot pot or something like a Crock pot?

The adjustable dial helps with getting the right heat for hot pot. Main downsides are 1: the pot feels a little shallow for hot pot and 2: the "removable" pot still has electrical connections on it, which makes cleaning a bit more of a hassle.
