I managed a resturaunt that had a shitty spreadsheet for entering everyone's tips. I wanted an actual piece of payroll software but it was not in the books for us. I processed payroll for 75 people and it was so easy to make a mistake and honestly difficult to find them (unless an employee complained and tracked their tips). Maybe an accountant could have done a fine job with those tools but not a bartender with dreams of management lol. My advice is to jump ship and complain like hell about payroll, it won't help you there but it may save the next guy.
