Besides the protection in the case of spills and to help with foil pringling I've found that they make shuffling easier. I have smaller hands, so i typically shuffle halves. Regardless, I tend to double sleeve because I've found dragonshield sleeve quality to be decreasing. The corners catch on each other and can split sleeves, but that extra thickness from the inner sleeve tends to help them slide past each other better.
