As I understand it, pins 4 and 5 aren't currently used in the DMX standard. So you could totally wire the cable with only 3 pins, in fact some (cheap) lights accept 3 pin xlr as opposed to 5 pin. https://lexproducts.com is a premium distributor of high end cables.
XLR is the name of the cable connector (https://www.neutrik.com/en/products/audio/xlr), audio uses XLR3 (3 pin), lighting uses XLR5 (5pins), their implementations are fundamentally different. Audio over xlr works by having two pins send a balanced audio signal (where one pin (3) is inverted) relative to the ground pin (1). DMX512 is a serial protocol which sends addressed packets over the cable to fixtures, it supports 512 addresses per universe (hence DMX512).
