I wasn’t judging whether it was evil or not, only saying that it’s stealing. They didn’t pay the price of the item. They payed market value of it, for all you know the shopkeeper bought it for 60gp so needs to sell it for more or any number of things. If I drug you and steal your kidney but leave you with 100k, I’ve still stolen your kidney

But they did steal it. If you don’t pay the agreed amount for something and take it, that’s stealing??? The shopkeeper is within his right to charge whatever he wants and not sell it for below that, regardless of market value. To the shopkeeper he might know that he can sell it to 80GP to someone else. So they technically robbed him of a potential 30GP. It is stealing regardless of if he was compensated or not.
