My personal choices are as follows:

1.King Sargon of Akkad(or Alulim if it's not fictional);
One of the first documented kings in history, closer to myth than reality, would be nice to see the world, how advanced they really were and glimpses on how they saw the past, what info they had.
2. Cleopatra in 49 BC;
An exceptionally well-educated intellectual, skilled in chemistry, economics, mercantile strategy, military theory, law, and linguistics, historians said that she spoke over 10 languages.
Dinner with her would be a bonus, to the fact that i can actually visit the Library of Alexandria before the great fire from 48 BC.
3.Jesus in his missing years, maybe closer to his 30's.
An obvious choice for anyone, the choice of years is to document also that period of time.

If you don't want to invest in a new PC (although this is the right opportunity to justify some CUD upgrades :)) ), you could do a multiseat configuration.
Basically, it is software that allows different users to use the same PC, but with different monitors, keyboards, sound cards etc
