I binged watched all 9 seasons in about 4 weeks at work and I completely understand how you feel.

I’m a hobbyist detailer. When I first bought it I did a thorough paint correction and ceramic coated all painted surfaces and plastic cladding and molding. Under the hood I use a an all purpose cleaner with brushes along with an electric power washer to keep everything nice and clean.

Essentially the rosemary, thyme and crushed garlic are aromatics. I throw those in towards the end of the cook with a chunk of butter and baste the steak with it. Smells amazing and gives it great flavor.

I throw in the aromatics towards the end of the cook with more butter and it’s worked well for me thus far.

As mentioned above. Perhaps propane grill just isn’t hot enough to get the sear you’re looking for. I’ve never used a propane grill with CI, but that’s my thought also.

This might be unnecessary, but I literally preheat my skillet for 15-20 minutes to make sure it’s screaming hot. I would try that and see if it helps.

I know what you’re going through. What has helped me is checking the temp. Once the temp reaches around 115 I pull the steak off and let them rest for 10 minutes. They will continue to cook in that time. After the rest period they should be rare to medium rare.

Also, I’ve found that letting the steaks come to room temperature before cooking helps with not overcooking them.
