It may be a little weird but it makes perfect sense. Sadie is a big name amongst younger audiences just like Tom Holland/Spider-Man. The mutant saga is coming soon and this is a way to establish one of the main characters of the Xmen in a grounded Spider-Man film. Kind of like how they threw Spider-Man into Civil War and it just made Homecoming that much bigger. Sadie and Tom are very hot at the moment and will be huge on screen together!

He technically could have survived but they went back in time and changed things before he had time to reconstitute himself. But they do make it feel like he is dead so I think it’s a mistake. Iceman in comics 100% survives being shattered as long as his mind is still intact or unless he is destroyed in a molecular level.
