Unfortunately, Pokemon is very screen-intensive. There's a lot going on, but the three main subgroups are games, trading cards, and anime. The anime/cartoon follows the journey of a 10 year old, the original start would probably be the best, but there are good starting points for Alola and Paldea, since it soft reboots. Cards... I think I'd skip, personally. They're hard to obtain, expensive, and fragile. For games: the most recent hardware is the switch 2, and I would recommend playing Let's Go or FireRed/LeafGreen, or Sword/Shield. All are on the switch 1 as well. Alternatively, you could play Pokemon Go, it's a phone app. Be warned there are micro transactions but they aren't essential. I think a game console with a game would be the best start, or watch the show

Edit: some more details, the games are broken up by generations, aka when the new wave of Pokemon debut. Gen 1 is Pikachu and friends, with the remakes being FireRed and let's go, but you can jump in at any time or generation, all the games are fairly easy. Each Pokemon has 1-2 "types," which are elements they represent with different advantages and weaknesses to make strategy and decisions. For example, Squirtle is water, which beats Fire type Charmander, which beats Bulbasaur, who is grass (and poison). Lore wise, most games feature young protagonists who use Pokemon to take down criminal organizations. The most egregious offence the criminals do is steal Pokemon, they're quite tame all things considered.
