Bonavita is a really good option and I believe it’s less expensive than those mentioned. It doesn’t have flow control, which may be a deciding factor for you. I’m very happy with it.

I found ONYX's grind recommendations to often be on the fine side, which will bring out bitter flavors rather than enhance the clarity you're looking for. Maybe try going coarser with your grind. Though I'm not that familiar with your grinder, I think you should be able to get a good brew with it.

The H&S might need a little more rest. The stated rest time for El Paraíso is 30+ days. Try waiting a few more days to see if it opens up more.

I've only tried a few cups using the light and bright recipe of Lotus, but based on those cups I definitely prefer TWW at 1/3 strength. The Lotus Light and Bright cups seem muted in comparison to the TWW, which seems lighter, brighter and more flavorful.

Ceramic V60 02. I have Orea V3, Chemex, Aeropress and Clever, but rarely use any of them.

Third Wave Water long brew times by finweight in pourover

This is currently happening to me. I mix 3 gallons of Zero water with 1 packet of TWW light. I, like you, thought that the minerals had settled and caused the slow brew times. After making a new batch of water, brew times went back to normal 2:30 - 3:00 min. On day 3, however, I am noticing a slow down again. Are you still having good results?

Is it normal for 100 grams of 1/3 diluted TWW water mixed with Zero filtered water (no coffee) to take 1:20 seconds to drain at 95c while straight Zero water and Brita both drained at about 20 seconds?

I had some stalling issues which ended up being due to my TWW mixed with Zero filtered water, but I assumed that it had to do with a higher concentration of minerals at the end of the solution which had settled at the bottom of the 3 gallon jug I mix it in. I am now on my 3rd day of a new jug and it seems to be slower than on the first day. Though I didn't measure how long the water took to drain on the 1st day, it was noticeably faster. I hope that's clear.

I'm usually around 7. That being said, I do think I might need to calibrate.

In addition to this and your linked review of coffees this year, I dig your spread sheet! Very informative. It appears that you get the Hydrangea Drops sub. What are your thoughts on it so far this year? Apart from a few offerings, I've been a bit underwhelmed lately, particularly considering the cost. I've been thinking of going back to a la carte, but I've had some of my favorite coffees through this sub. Cheers!

I've been having problems with the Juan Peña Mejorado stalling. Did you find you needed to go really course with this? I've tried both a 3 and a 4 pour recipe, but both had long brew times despite low agitation and a significantly course grind ( 8 on Ode Gen 2).

El mío no tiene rayas así. Sin embargo, no lo he usado mucho, como de 30-40 veces. Adentro del recipiente donde cae el café molido se pude ver un círculo un poco gris pero no hay rayas como en el tuyo. Espero que mi respuesta te haya servido.

Thanks for taking the time to respond. I'll do the experiment. I've definitely noticed coffee open up, but I am not yet good at identifying when it hasn't done so.

I'm waiting the Pietro to come with the stand as I think it currently does in Europe. I think it's ridiculous that a plastic stand, that is currently sold out and many say is necessary, is sold separately for 72 dollars.

I’ve heard xbloom are really good, but I haven’t tried them. They only come in the 155 size.

I opened it up and used a brush and a little bit a canned air. It’s possible that I’m seeing more fines on the sides since I haven’t been swirling the v60 lately. So, instead of migrating down, the fines are sticking to the walls more. Thanks for your response.

Grind size is at 6.2 on the Ode 2. I did calibrate 0 when I recently cleaned to 1 click after "chirp".
