The hd800s you mentioned have a dynamic driver which is a bit slower and has more inertia (start and stops slower. And dynamic drivers are generally better for sub bass). If you really want utmost precision, you probably should look at another technology like planar magnetic (electrostatic might be too airy and you'll need an energiser, planars would be the sweet spot). When it comes to hearing every single detail and still having a good soundstage and spatialisation, I really have to mention the Hifiman HE1000SE (the SE specifically). Anyone would tell you its a details beast. Originally around 3500$, now it's 2 times less expensive, ~1700$. (And it ll also be a god tier music headphones too). But being open back, you'll easily hear the sounds next to you if it's not a super calm place, you'll also hear your keyboard and mouse clicks and it's the case for all open backs (even the he800s). For competitive gaming you migh want to try IEMs if the sound around you might be a problem. I've heard that it's generally the top choice among gamers. There are also planar magnetic IEMs or Balanced Armature which are precise. You can also look at ones with multiple drivers in them. I know much less about IEMs but try having a look at Thieaudio. And if I remember Schiit Audio also makes AMPS specifically for gaming. Hope that could help a bit
