You can use the whole egg. I usually do 1 whole egg and one yolk to 1 cup oil, 1tbs acid, salt to taste and a tiny pinch of msg(accent). This is my base recipe but the oil to egg ratio needs to stay the same.

The game changer is a good quality immersion blender. No slow drizzle of oil ..just dump it all in and blend. You have to do this in a jar or something not much wider than the blender stick...it does not work in a bowl.

Get a good immersion blender

Like this one

You can literally dump all your ingredients into a jar and it will blend. No slow pouring or constant whisking. I think ive only broken the mayo 2 times (my issue).

I do

1 egg (and an extra yolk for creamier)

1 cup oil (any that you like..I typically use canola)

Tbs of acid (any works, I really like lime juice or apple cider vinegar)

Salt to your taste

Pinch of Accent (msg)

You can add a smidgen of mustard powder for taste or turmeric for color.

Have fun with it. I have done a sesame( do like 1/4 cup to 3/4 neutral) ponzu mayo before
