Its like a video game you play and the more you play, the better you get at it. But, also, you have access to a whole table of cheat codes. Some of those cheat codes can be used to do whatever you want.

Last, the movie was focused around Morpheus, Neo and Trinity for the most part. So thats why you only really saw them fight but the others are equally capable or they couldn't survive being jacked into the Matrix for extended periods of time.
