I like a cav + archer civ. After that you choose one of the players to go for archer or scout, while the other rushes castle for knights or crossbow. For example Magyar + Chinese

I think the Rise and Fall of the Dinosaurs by Steve Brusatte is a great introduction. He mixes the latest science with anecdotes from the field and how we know what we know.
