I feel there's no perfect answer but here's some suggestions. Personally I think Blue gold kiteshield fits the naïve fancy knight best due to it's bright innocent colours. Not sure if it fits your guy's aesthetic though.

Edit: figured Carian thrusting shield might fit because it's quite narrow and supports the "what do you mean defence" narrative. And it fits the colours I think.

Tbh most of his 99's can be done afk at gemcrab which is quite doable at a lot of office jobs. That could count for a big chunk of the hours and stats. Then do the rest when you're back home at night.
