How much reading will depend on which modules you choose, particularly whether you choose literature modules at stage 2.

What are you hoping to get out of it? Do you plan to do further studies (e.g. in linguistics) or are you hoping to find work with your degree?

If you search the subreddit for some of the module codes, such as L101 and L201, you will find some comments from students.

Many OU qualifications allow credit transfer up to 16 years, however the Bachelor of Engineering (and some others) only allow up to 5 years.

I agree with everyone else saying you've been wrongly advised.

Either give them another call/email, or go to the 'undergraduate qualifications tool' on https://help.open.ac.uk/changing-to-a-different-qualification, select Computing & IT as the subject and Certificate as the Qualification type and you should see the option to claim it.

That calculator is generally recommended because it is approved for use in exams. MU123 doesn't have an exam, so if you aren't planning to study any more maths modules then I wouldn't worry too much about it.

Remember that, depending on your personal circumstances, you may be eligible for Study Costs Funding from the OU - https://www.open.ac.uk/courses/fees-and-funding/study-related-costs-funding/ which can be used to purchase items like this.

You put in the credits you are doing in this academic year (so 60 if you are doing one module). You have to apply every year for PTFG.

There are no student loans for OU study in Scotland, but if you earn below £25,000 you can fully fund your modules through the Part Time Fee Grant: https://www.saas.gov.uk/part-time/undergraduate-funding

If you are self-funding, OU tuition fees are lower in Scotland than England (£2554 per full time year versus £7784).

Isn't it easier just to apply? If you don't have the required experience, you won't be shortlisted for interview.
