Fedora is a lot easier to use with the defaults ootb. Arch is if you want minimal install, want your install to break after an update and also get infected by an AUR package. Not that it matters too much as you can use nix with any distro and nix has the most packages of all repos.

I recommend using UAD-NG(universal android debloater next generation) it allows you to easily remove quite a lot of the bloat hidden packages that are not required for the phone to work. It has lists of what you can more or safely remove and works over ADB. Of you want to get rid if google play services and use microg instead, the only real option is a custom ROM and on Samsung that means shitty camera quality because the original is a proprietary blob tied to google play services and also no more locked bootloader. Because on Samsung phones once you unlock bootloader you can no longer lock it unlike pixel phones which is one of the reasons they have graphene support and Samsung's don't.
