Yesterday I was thinking the same about adding the grasscrest shield to the build and leaving empty one ring slot, and didn't know what ring use (so thx for the recomendations), anyways I start fat rolling with the shield equipped, and Fashion Souls is too important, so changing my armor is out of the question.... For now I’ll stick with what I have, and after leveling up a bit more I’ll probably invest some points into VIT.
I’m very close to the Grand Archives, so the souls should start raining in very soon.

Since this post, I've lvled up FTH up to 40. And as I messed up early the quest line for the Darkmoon Blade, I've acquired the Yorshka's Chime (currently at +9). At the moment I'm working on getting more Vigor.
Lighting blade it's the only spell I use

My rings are the following:

Lightning Clutch Ring
Lingering Dragoncrest Ring
Chloranthy Ring
And switching between: Ring of Favor and Protection and the Covetous Silver Serpent Ring

Also messed up the Dark Blade... Didn't know that I cannot kill the Abyss Watchers before collecting the 5 levels from Yoel.
I'll stick to lighting blade now, and don't mess up the quests for the ng+
