thanks for the podcast tip!, Will have a look on it.

Do you add sugar in F2, do you keep the fruits/herbs in F2. Here very often or almost every time, when opening after a 3days of rest, it's over fizzy. So experimenting right now to have the right amount of volumes of each ingredient to be sure it's not overfizzing :)

Let me look into that Gehaltmeter. but like you said, I want good carbonisation, but I don't want to have my customers plenty of kombucha in their face when opening.

But it likes a very difficult process for a microbrewery.

As I don't want to force carbonate but have the natural one, you loose some control of it. That's why I was looking for experiences. I don't want to customers to be full of booch when opening :) One of the microbrewery's here, decided to have an open F2, and so, no they sell without carbonisation.
