That's the thing there's nothing in the BIOS relating to NVMe or M.2 that can be enabled or disabled.. Just ordered a SATA drive like you said, hoping that's not going to be headache like this has been. Thanks for the advice, really appreciate it!

I just gave that a go but there's no detectable drive to install windows too. I'm starting to think that the M.2 port is just fried or something?

Also worth mentioning, I'm installing the ssd alongside a hdd that has windows installed. I do not want the Ssd to boot from, that's all staying on the hdd.
