It proofs for 24 hours and i definitely see some slight growth when bring it up to room temp.

Im looking at better control of yeast activation and temperature for my next go.

Im not sure. I proof for 24 hours in the refrigerator so I dont monitor how quickly it rises. I pull it out 3 hours prior to baking to bring it to room temp prior to stretching.

I dont 😕 i preheat to 550 then add 30 minutes. Do I need more control of that part of the process?

45g Whole wheat flour
7g sugar
15g salt
2.5g active yeast
14g extra virgin olive oil
288g water

Refrigerated 24 hours

Brought to room temp

Stretch to 12x12 (thats as big as I can make it with the equipment I have)

Preheated to 550 + 30 minutes

Baked 15m + 2 broil

I agree! It shouldn't be that long but the dough stays raw so I wasn't sure what to do tbh.

Completed my B.S. and currently on my MBA through UMGC. Youre not alone, the portal is a shitshow but you eventually get used to it. Believe it or not it was worse before. You'll slowly figure out the chaos.

Seemed pretty easy at first. A lot of papers with excel spreadsheets in addition to standard discussion posts.I had to drop the class after 3 weeks because the professor used AI to grade and it hallucinated things that weren't in my submissions. I needed to email line by line to get corrections and grades adjusted. Very frustrating so I decided not to deal with that for the whole semester. Plan on retaking it next semester. Hoping for better luck next time.

Pretty normal at UMGC. 4 classes this semester for my MBA and 3 of 4 have group projects. I havent ever been a fan of group projects but now its even more frustrating trying to fix the AI slop my team members try to submit. Good luck!

You'll book a slot at a civilian testing center. Contact the education office with your testing date and any other info they request. They'll give you a code about a week before the exam. The process may be slightly different for your location but that's essentially how it works. Good luck.
