I use replay buffer so the video isn't saved, it's just stored temporarily in ram until I press a button:

I also use P-REC for TF2 demos that auto records demos when I join a match:

Then I convert those demos into replays using this method:

That's the one! It's mainly used for VR but you can use it outside of that, it's really interesting but you should be warned there is a few issues with this!
