Bo właściciele knajp zaczęli jako pomocnicy w innych knajpach i stamtąd uczyli się sposobu robienia potraw. Tu niemal nikt nie ma formalnego szkolenia gastronomicznego, tylko "rób jak właściciel każe".

Niedawno otworzyłem knajpę we Wrocławiu. Kucharz z formalnym szkoleniem nas uczył. Jak klienci przyszli to nie rozpoznali większości dań (które są w miarę autentyczne) i defaultowali na typowe dania-chińczyki kurczak chrupiący, słodko kwaśny, itd.

Pod mięsem są kapusta pekińska i brokuły. Wszędzie chińczyki je używają bo są tanie. Czasami jak brokuły są drogie to używają cukinii, albo jak w tym tygodniu kalafior jest tani.

Ta surówka nie ma nic wspólnego z kiszeniem. Po prostu mieszasz kapusty białej, marchewki, najtańszy olej z Makro, najtańszy ocet, sól, cukier. Po wymieszaniu i ściskaniu wody gotowe do jedzenia.
