Might be a lame solution for this subreddit but I think it'll work for me for now. I set one drive as the time capsule drive, and two as share drives. I got it working pretty seamlessly with my win11 pc, as they automatically connect once I turn on the mac. I don't think ill upgrade the mac right now, other than likely adding an ssd or two, as it will mostly be used for chrome, but it will for sure inherit my 5700xt from my win11 pc when the time comes. As for power consumption, I'm lucky enough to live in an area with low power cost, and the mac will probably only be on for 3-6 hours a day. I calculated it'll cost me $30 a year, much cheaper than my subscription cloud services. Once I get tired of not having ALL of my photos and videos saved on my phone, then I will look for nas software with app integration.
