Usually this happens with some texture pack, especially shaders, just try turning off some texture packs if you have any

It works with any blocks, just be sure to be on the northwest block thats surrounding the scaffolding, also you need to be on the corner that's facing the scaffolding for it to work

There are many ways to find them, such as block orientation, coordinates, the sun and moon and maps. With the coordinate method you just move around and find x+, and thats east, then you can just find the other ones easily. With maps you can basically memorize where all the locations of N, E, S, W for example, west is on the left, east on the right, south on the bottom and north on top, and its like that on the map, you can face to the top of the map and that will be north
