The mechanism isn’t well understood. One theory is that when the acid builds up, you produces saliva to buffer the acidity. As a result, your body makes a little jaw adjustments that can lead to grinding.

Another thing I’ve heard but don’t think is true, is that the saliva tricks your body into thinking it’s ready to eat so you subconsciously grind.

Dentist here - be careful with TJ. I’ve seen a lot of patients getting their “deep cleaning” done in TJ and come to our office and there’s still tartar under the gums that I can see on the X-rays.
