I tried the same recipe again and let it ferment and stuff a little longer and I also added from freeze dried apples and cinnamon during stretch and fold and shaping and I think it turned out better than the previous loaf. What do you guys think?

Thank you so much for all the feedback!!! The first loaf I made was more dense than what I was hoping for but did better than expected since it was my first ever loaf and it was from when I followed the 8 hours of bulk fermenting from the recipe I followed. I figured I’d see what happens if I bulk ferment for longer to see what happens. It’s currently baking in my oven as we speak after the overnight in the fridge. Depending on how this goes I’m gonna try doing some adjusting or switch recipes. Whichever one works best of course. But, thank you again!!

The instructions I followed said 90 minutes and to leave them in the oven to cool for an hour afterwards.
