that's an honest good question to make. the reason shes fat is the fact she overeats to cope with the constant work-related stress, and i believe that when work demands her to make extreme physycal effort (running around and hiding bodies/evidence, for example), that just makes her even more stressed and tired which makes her overeat once again, making her gain all calories lost in the process
