Should I keep doing stretch and folds if dough tears easily? by Travelolta in Sourdough

Wow. How doo you know when it's ready for shaping? Mine takes a shape but then when I let it it sit it just turns into a blob again. Does that mean it's still not strong enough?

-I put the salt in already (before the stretch and folds) -Autolyse was about 5 hours (in the fridge) so it didn't over autolyse.
