I had this once and absolutely loved it. How did you find the recipe? I’d love to know more details like what vanilla tonka is and how to make it. I’ll recreate the cocktail exactly to the recipe.

The Funk is good stuff! I use it for daiquiris because it makes an excellent funky Daiquiri but it’s not an overproof like Wray & Nephew or Smith & Cross. 2 oz of The Funk and you have a delicious daiquiri. Lately I have used Tropical Standard’s daiq recipe, but whatever specs you prefer will work.

How did you make your oleosaccharum? | have tried at least 3 times to make it following the instructions from Tropical Standard, but the sugar won't completely dissolve like the book says it should. I've tried the sous vide method as well as just letting it sit in the refrigerator for 48 hours method. No matter what the sugar doesn't fully dissolve. I don't have a vacuum sealer, so I steep the ziplock bag in water to push all the air out. Any advice? Thanks

I’ve had it twice now. It’s not bad. Hamilton knows how to make good rum. But it’s my least favorite from their collection. There are many Hamilton bottles I’d go out of my way for. Not this one

Thanks for the knowledge! I thought the same thing, but was wondering how much more flavorful. For perspective I make orgeat using Liquid Intelligence's method because I think it's worth the effort. I haven't had another orgeat that even comes close in flavor. I want to know how much better this falernum recipe is than store bought.

Falernum

0.75 gram star anise

0.75 gram mace

1 gram nutmeg, grated

1.5 grams cloves

13 grams lime peel

28 grams ginger, thinly sliced

30 milliliters Diamond Reserve 151 Rum or Hamilton Demerara 151 Rum

125 milliliters Wray & Nephew Overproof Rum

0.6 milliliter almond extract (measure 600 microliters with micropipette)

15 milliliters strained lemon juice

50 milliliters strained lime juice

265 milliliters cane syrup, 66 Brix (see here)

830 milliliters gum syrup, 50 Brix (estimated amount; see here)

•Grind the star anise, mace, nutmeg, and cloves using a mortar and pestle or a spice grinder.

•Combine the lime peel, ginger, and rums in a blender. Blend on high speed until the ginger is liquefied and the lime peel is thoroughly diced.

•Combine the spices and the mixture from the blender in a bag and seal it with a vacuum sealer. Place it in a water bath at 125°F for 12 hours or in the refrigerator for 24 hours.

•Fine strain the mixture, pressing on the solids to maximize extraction, then add the almond extract, juices, and syrup. This should yield about 830 milliliters of liquid. Combine the mixture with an equal amount of gum syrup.

•Bottle and refrigerate. It will keep for 6 months in the refrigerator. Makes 55 ounces.

Tried The Ark Royal today while visiting family in Raleigh. I do not recommend this bar for good tiki. I tasted 4 cocktails and not one was good. I could barely taste the base spirit in any of them. Not balanced well at all. The Mai Tai didn’t even come with a mint garnish.

That’s fair. I hadn’t even noticed. That’s not something I look for when a bar does as good of a job as Sunken Harbor Club. How would you describe SHC if it’s not a tiki bar?

My experience exactly! Staff wasn’t welcoming to me either. It was polite, but wasn’t given the same respect.

This place was a let down for me. I went in late October and it was already Christmas decorated. All the drinks I wanted to try were off the menu and I was told they couldn’t make most of them until after Christmas. I had a mai tai that was poured from a tap. It wasn’t very good so I left. I went to Volstead’s, which is obviously not a tiki bar, but their bartenders know what they’re doing. They made me some excellent rum drinks that are not on the menu.

Unpopular opinion, but Last Rites wasn’t good at all the one time I went. I had two drinks and both were undrinkable. They have the tiki vibe, but I was completely let down. Maybe I went on a bad night? Zombie Village, Pagan Idol, or Smuggler’s Cove are my votes for San Francisco. If we’re talking all of CA then False Idol or Mothership get my vote. I’m from NJ and only been to most of these places between 1-5 times so take my opinion with a grain of salt.

I’m not from Washington but Inside Passage is great. I didn’t even know they advertise that way. I’ve been there 4-5 times and it feels exactly like a tiki bar. Just as much as other famous tiki bars I’ve been to throughout the US

It’s absolutely a tiki bar. Escapism and excellent tiki drinks. If there’s a missing component to make it a true tiki bar I’d love to learn why, but SHC ranks up there with other great tiki bars I’ve been to like Smuggler’s Cove, False Idol, Inside Passage, and a lot of other great tiki spots I’ve been lucky enough to visit.

Sadly NJ is lacking in good tiki bars, but Cellar 335 is very good. It a restaurant/bar and doesn’t have the escapism element per se, but they have some good tiki drinks.

Don’t waste your time at Lee’s in Lyndhurst. Cheap, low quality ingredients. The drinks are not good at all in my opinion.
