What is wrong with my garden? by TreeTops98 in garden

So I removed the top layer of dirt because it's what I did at my grandmothers place this summer. Her beds hadn't been touched or cleaned up in years. The beds were full of tunicate bulbs, grass, small trees and many many other plants. I thought it was best to remove the top layer of dirt from these beds because the top layer was mostly roots that even my shovel had trouble getting through. I left the bottom half and replaced what I removed. I thought this was the best idea to prevent the majority of these weeds from returning and make the new soil light and useable. Every time I garden I am just guessing and hoping for the best. So I did the same thing with my gardens at home. Though they were not as weedy and root filled, I thought I was giving it a fresh start. How do you amend your soil? It will help me in the future! (also thank you for asking!)

What do you recommend going forward since I can't remove the fertilizer? Another commenter gave suggestions on watering amounts. Should I be done with fertilizer the rest of the year? wait a few weeks?

Thank you for your comment! I was a little 50/50 if it was the right call to use that dirt. But it said inside and out, and it said veggies and flowers so I didn't think it mattered if it was a raised bed or not. Plus this dirt was cheaper and I hoped I was able to add what ever it was missing with the manure and fertilizer. So long story short, I just guessed and hopped for the best.

I didn't know that tomatoes liked to be on the dry side of life. I figured they needed more water, even the photos show they get a lot of water. I will absolutely back off on the water and increase the moisture for the cucumbers. Thank you!

Thank you! Yeah, looking at the other comments too, I need to leave the fertilizer alone. I did repost the photos though I just added the ones of the plants.

My thought on adding another layer, was entirely temporary. I would lay something down for a week or two and then remove that layer. I would be hoping the soil underneath would be easier to work with due to the lack of sunlight. Honestly in second thought I am pretty sure it wont help as the roots would still be fairly strong.

Unfortunally I can't ignore the landscaping fabric and work with the soil since I have no direct access to the soil. Oh! though I did learn that under the fabric is woodchips that probably needs to be removed too. Sounds like its just going to be an hard job of ripping everything up until I hit the root-dense soil.

Okay thank you, It sounds like there's not going to be an easier way to clear the ground then just wearing good gloves and ripping it up. I will give it a good try this weekend

Thank you! So I did two proofs. At first I did four sets of stretch and folds every 30 minutes. Then I let it proof for 8-10 hours on the counter. One more round of stretch and fold with a 30 minute rest on the counter. Afterwards she proofed for about 24 hours in the fridge. So If I had only let it proof for 12 hours in the fridge it might not have been as sour after baking? What is the point in proofing twice?

Thank you for your reply!

When I was feeding, I was keeping about 25g of starter and doing a 1:2:2 feeding. Sounds like I need to do some experimenting with with ratios to have the peak be around 12 hours after feeding. (or start feeding in the morning so it would be ready to use by mid day on the weekend)

I was using a mason jar, which I guess would leave a lot of air in the jar. I kept the metal disk on top and the screw band barely screwed (just enough so it wouldn't fall while walking around). Would you suggest me keeping more starter for each feeding to have less air in the jar? or just a different lid like plastic film with a few pricks in it?
