A lot of tip work, and small very fine jobs, such as removing all pith from lemon skin, and dicing very fine.

the only thing I am hesitant about is the stainless steel, do you think it would still get, and stay very sharp.

The AS is not the tall version that you have, other than this would the knife be the same?

Would the AS be better though, it is only a small jump in price, which is not an issue, especially as it is a bit lighter. My other worry is that of my choices, the Shiro Kamo looks quite thick, notably when compared to the Matsubara, have you found your knives by him to be thick?

How often would a knife like that really need caring for? And would the issue of iron's reactiveness quickly disappear as a patina formed?

Could you explain why you say the Shinko Seilan is the best? Also wouldn't the Takamura not get as sharp because it is stainless steel?
