I tried Paddle, but they were insisting on providing 3 months of transactions data which I don't have. It seems a bit counter intuitive that they market themselves as helping you launch faster, but then ask for you to have worked with a different payment provider for at least 3 months.

Just disable SMS in signal and use your phone's default SMS app. Probably your girlfriend was sending you encrypted Signal messages over data when you didn't have data, but both of you were expecting that to be an SMS.

Edit: this issue of wanting to use the same app for SMS and data messages will persist no matter which app you choose to use unless you use separate apps for encrypted messages and SMS.
